More Than S'Mores: Bacon Pancake Dippers

Want to know my 2 favourite things about pancakes? (Yes, I’m actually asking this question). First, the way my daughter Stella says pancakes…”panny cakes”. Adorable. I just can’t correct her! And second, when they are served with bacon. I find they go hand-in-hand. How’s about we jam bacon inside the pancake?! I saw this on Pinterest and just needed to test it out. It’s a super fun way to enjoy pancakes even when we are on the road camping. 

I found the secret to fluffy, thick pancakes: fresh baking powder, not sifting the flour, not over mixing the batter, and letting the batter sit for 15 minutes before using!

Bacon Pancake Dippers

Makes roughly 12-16

1 cup of all-purpose flour

2 heaping teaspoons of baking powder

1/2 tsp of salt

2 tbsp of white sugar

1 egg, beaten

1 cup of 2% milk

1 tsp of vanilla

2 tbsp of vegetable oil

6-8 strips of bacon, cooked and cut into 2 pieces

Maple syrup to serve


Step 1: First, fry up the bacon. Drain on paper towel, allow to cool enough to handle and cut the pieces into 2.

Step 2: Make the batter. In a large bowl, whisk together the flour, baking powder, salt and sugar. In another bowl, beat 1 egg. Now add the milk, vanilla and vegetable oil. Whisk altogether. Slowly pour the wet into the dry ingredients. Mix to combine, not too much, the batter can still be a little lumpy. *Have patience and wait 15 minutes before making pancakes*.

Step 3: Clean out the frying pan you used to fry up the bacon and place over medium-low heat and add a wee bit of bacon fat or vegetable to the pan. I made mine on a non-stick frying pan so I didn’t need any extra grease, but you may need to!

Step 4: Working with 2 spoons, scoop out some batter and make strips of batter roughly 3 inches long and 1.5 inches wide. Now place 1/2 piece of bacon in the centre and lightly press down. Add a little batter on top of the bacon and cook. Wait until you see bubbles forming on the batter then flip. Cook for another few minutes and remove to a plate. Repeat with the remaining ingredients.

Serve hot with maple syrup!
